Bikini Recipe
Makes enough for 10 people
For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Method
To prepare the Syrup: Combine the listed ingredients inside a pan, bring to a gentle boil, agitating until the sugar dissolves. Then, remove from the heat and let it to cool completely. Transfer into an sterilised bottle, seal and store chilled, it will last for up to four weeks.
To make Batch Mix: Mix the specified liquids into a large bottle, let it rest for one hour, then filter it preferably using muslin, to ensure it's perfectly clear.
For serving: Add 85ml from the cocktail base into your mixing glass containing ice, and agitate gently for a minute to cool it down. Strain into an cold coupe glass or equivalent, garnish with a few cranberries and finish with a brief mist with the mandarin essence over the drink.
